Meatloaf (Meat loaf)

Ingredients

  • 1kg of mince
  • 500g of Sausage meat
  • 3 Courgettes/zuccini, grated
  • 4 Carrots, grated
    Depending on the size of the carrots this sometimes reduces to 3, but 4 of the size we usually buy
    I like carrots. :-)
  • Rolled oats
    I don't measure this, 1/2 to 3/4 of a cup?
  • Barbecue sauce.
    I don't measure this, 1/2 to 3/4 of a cup?
    I use the cheap store's own brand from Countdown.
  • 1 egg
  • Salt and Pepper

Instructions

  1. Add all of the ingredients together in a bowl and mix until combined.
    More mixing means a denser meatloaf and depending on how you like your meatloaf, you can avoid, or aim for, that.
  2. Line a 1/4 sheet pan or baking tray with foil.
  3. Tip the meat mixture out onto the tray and form into a loaf shape.
    Try and make it the same thickness, a rectangular shape works best so the outside of the ends doesn't overcook.
  4. Bake for about 45 minutes at 180C. At about 35 minutes brush with more barbecue sauce to glaze.
    Without a brush, squirt the sauce over and spread it out with the back of a spoon.
